Choose the right avocado - this is crucial for great avocado toast. A ripe avocado should yield to gentle pressure when squeezed but should not feel mushy. The skin may be dark green to nearly black depending on the variety. If you press near the stem and it gives slightly, it is perfectly ripe. Avoid avocados that are rock hard (not ripe yet) or have large soft spots or dents (overripe). Cut the avocado in half lengthwise around the pit. Twist the two halves in opposite directions to separate them. Carefully tap the knife into the pit and twist to remove it. Use a spoon to scoop the flesh out of the skin into a small bowl.
